Grilled Chicken Salad with Fresh Strawberry Dressing
This Italian recipe will give any person’s taste buds a kick for the salty and sweet taste that creates just the perfect mix in every bite.
For the ingredients for a serving of four, one will need the following for the salad:
- Twelve ounces trimmed boneless and skinless chicken breasts
- Half cup chopped scallions
- Eight ounces asparagus (stem ends snapped off; cut into two-inch pieces)
- Eight ounces stemmed snow peas
- Half pound stemmed sugar snap peas
- Two tablespoons fresh lemon juice
- One tablespoon almond oil or canola oil
- Two teaspoons canola oil
- One-fourth teaspoon salt
- One-fourth teaspoon freshly ground pepper
Instructions
For the ingredients of the strawberry dressing, prepare the following:
- One cup sliced strawberries (about 6 or 7 pieces)
- 1 tablespoon balsamic vinegar
- Three-fourth teaspoon ground pepper
- Half teaspoon sugar
- One-fourth teaspoon salt
- Two tablespoons almond oil or canola oil
To prepare the salad, follow these simple procedures:
First, heat a large pot of water on to boil the vegetables. Prepare a grill.
Second, blanch asparagus, sugar snap peas and snow peas for two minutes in boiling water. Drain the vegetables and rinse with cold water to refresh. Dry them with paper towel. Mix the lemon juice, almond or canola oil, salt and pepper in a large bowl. Add the scallions and vegetables. Toss and mix to coat.
Third, coat the chicken with canola oil. Sprinkle with the lemon and pepper seasoning. Grill the chicken until light brown and no longer pinkish in the center, or until preferred cooked condition.
Fourth, cut chicken to preferred slice. Place on top of the vegetable.
To prepare the strawberry dressing, all that needs to be done are prepare a blender. Put vinegar, strawberries, sugar, salt and pepper in blender. Process the ingredients until they are pureed. Stop once in a while to scrape down the sides of the blender and add oil. Process until the puree is smooth.
When all steps are done, place vegetables on a plate, top with chicken and drizzle with the strawberry dressing.
